I used NaturePro Grass-Fed Australian Vanilla Whey protein and it definitely worked out just fine!<\/p>\n<p>These muffins contain complex carbohydrates and fiber from the sweet potatoes, good fats from the coconut oil and protein, vitamins and minerals from the eggs and protein powder. \u00a0Even the sweetener, maple syrup, offers a host of naturally occurring minerals. Not your everyday sweet treat!<\/p>\n<p>I do recommend making your own almond milk to use in this recipe. \u00a0Store bought almond milk, in most cases, contains added ingredients that you just don&#8217;t want to be consuming. \u00a0And making your own almond milk is easy and extremely cost effective. You can find the recipe for almond milk right <a href=\"http:\/\/wp.me\/p6GHXW-52\">here<\/a>.<\/p>\n<p>Here is Joy&#8217;s recipe. \u00a0You can enjoy these muffins for breakfast, as a mid-day snack, quite honestly whenever you get a hankering for a little sweet treat.<\/p>\n<p>I got 12 muffins from this mixture.<\/p>\n<p style=\"text-align: center;\"><strong>Sweet Potato Protein Muffins<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>by<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>Joy McCarthy of Joyous Health<\/strong><\/p>\n<div class=\"blog-yumprint-ingredient-section\">\n<div class=\"blog-yumprint-subheader\">Ingredients<\/div>\n<ol class=\"blog-yumprint-ingredients\">\n<li class=\"blog-yumprint-ingredient-item\">1\/2 cup coconut flour<\/li>\n<li class=\"blog-yumprint-ingredient-item\">\u00bc cup Vanilla protein powder<\/li>\n<li class=\"blog-yumprint-ingredient-item\">2 tsp baking powder<\/li>\n<li class=\"blog-yumprint-ingredient-item\">2 tsp ground cinnamon<\/li>\n<li class=\"blog-yumprint-ingredient-item\">1\/4 tsp fine sea salt<\/li>\n<li class=\"blog-yumprint-ingredient-item\">2\/3 cup sweet potato puree<\/li>\n<li class=\"blog-yumprint-ingredient-item\">1\/3 cup maple syrup<\/li>\n<li class=\"blog-yumprint-ingredient-item\">1\/2 cup coconut oil, melted<\/li>\n<li class=\"blog-yumprint-ingredient-item\">5 eggs, whisked<\/li>\n<li class=\"blog-yumprint-ingredient-item\">3\/4 cup almond milk<\/li>\n<\/ol>\n<\/div>\n<div class=\"blog-yumprint-method-section\">\n<div class=\"blog-yumprint-subheader\">Instructions<\/div>\n<ol class=\"blog-yumprint-methods\">\n<li class=\"blog-yumprint-method-item\">Combine all the dry ingredients in a large mixing bowl.
