{"id":4256,"date":"2020-08-27T12:00:20","date_gmt":"2020-08-27T12:00:20","guid":{"rendered":"http:\/\/www.cathybiase.com\/?p=4256"},"modified":"2020-06-01T18:57:26","modified_gmt":"2020-06-01T18:57:26","slug":"yes-eat-eggs","status":"publish","type":"post","link":"https:\/\/cathybiase.com\/index.php\/2020\/08\/27\/yes-eat-eggs\/","title":{"rendered":"Yes Eat Eggs!"},"content":{"rendered":"<p>Eggs are pretty much the perfect food.<\/p>\n<p>A large egg\u00a0has approximately 71 calories, 5 grams of fat, less than 1 gram of carbohydrates and approximately 10 grams of high-quality protein.<\/p>\n<p>They contain many nutrients that you need in your diet including vitamins A, several B&#8217;s, D, E &amp; K.\u00a0 They also have phosphorus, selenium, calcium, zinc and choline.<\/p>\n<p>Cracking an egg opens up 2 very distinct inner parts, the egg white, called albumin and the yellow egg yolk.<\/p>\n<p>The egg white acts as a protective cover for the yolk and makes up the majority of the egg\u2019s total weight. The yolk makes up about 30% of the egg\u2019s total weight, contains about 80% of the egg\u2019s total calories and contains almost all of the fats in the egg. The yolk is the main source of nutrition for the developing embryo.<\/p>\n<h4><span style=\"color: #386c9a;\"><strong>Egg Whites<\/strong><\/span><\/h4>\n<p>Egg whites are:<\/p>\n<ul>\n<li>low in calories<\/li>\n<li>low in fat<\/li>\n<li>richer in protein than egg yolks<\/li>\n<\/ul>\n<h4><strong><span style=\"color: #386c9a;\">Egg yolks<\/span><a href=\"http:\/\/www.cathybiase.com\/?attachment_id=4271\" rel=\"attachment wp-att-4271\"><img decoding=\"async\" class=\"wp-image-4271 alignleft\" src=\"http:\/\/cathybiase.com\/wp-content\/uploads\/2019\/12\/eggs-1217263_640.png\" alt=\"\" width=\"134\" height=\"110\" \/><\/a><\/strong><\/h4>\n<p>Egg yolks contain more vitamins than egg whites. \u00a0\u00a0As well, vitamin A, D, E and K are found only in egg yolks and not in egg whites.<\/p>\n<p>Of note, 90 percent of an egg&#8217;s calcium and 93 percent of its iron content is in the yolk.<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #9dbfad;\"><strong>Here are a few other interesting facts about eggs<\/strong><\/span><\/h3>\n<h4 style=\"font-style: inherit;\"><span style=\"color: #386c9a;\"><strong>Brown vs. White Shells<\/strong><\/span><\/h4>\n<p>An egg\u2019s shell colour has nothing to do with its nutritional value.\u00a0 It is due to the breed of the hen that laid it. Hens with white feathers tend to lay white eggs and hens with red feathers tend to lay brown eggs.<\/p>\n<h4><span style=\"color: #386c9a;\"><strong>What the Yolk Colour Means<\/strong><\/span><\/h4>\n<p>Diet determines the colour of the egg yolk.\u00a0 If the yolk is a dark yellow colour the hen was probably fed green vegetables. A medium-yellow yolk is likely a diet of corn and alfalfa.\u00a0 A light-yellow yolk could be the result of eating wheat and barley.<\/p>\n<h4><span style=\"color: #386c9a;\"><strong>Why shells stick more with fresh hard-boiled eggs than with older ones<\/strong><\/span><\/h4>\n<p>If you use fresh eggs to make hard-boiled eggs, they are harder to peel than older eggs.\u00a0 In fresh eggs, the egg white tends to stick to the inner shell membrane due to the less acidic environment of the egg than in an older egg.<\/p>\n<p>As an egg ages, the egg shell becomes porous, absorbs more air, and releases some of its carbon dioxide. This makes the albumen more acidic, causing it to stick less to the inner membrane.
