{"id":4133,"date":"2019-09-19T15:00:04","date_gmt":"2019-09-19T20:00:04","guid":{"rendered":"http:\/\/www.cathybiase.com\/?p=4133"},"modified":"2019-09-19T15:00:04","modified_gmt":"2019-09-19T20:00:04","slug":"black-bean-kale-quinoa-salad","status":"publish","type":"post","link":"https:\/\/cathybiase.com\/index.php\/2019\/09\/19\/black-bean-kale-quinoa-salad\/","title":{"rendered":"Black Bean, Kale &#038; Quinoa Salad"},"content":{"rendered":"<p>Having good quality ingredients stocked in your kitchen pantry means always having a meal on hand.<\/p>\n<p>I recently found myself somewhat stranded up north without a car or companion.<\/p>\n<p>My husband and I arrived at our place in Collingwood late one evening with just a few things on hand.\u00a0 We had planned to shop the following day but circumstances sent my husband home before we could get in to town to shop.\u00a0 The only food that I had brought from home was the kale that I hadn\u2019t used the week before and cream for my morning coffee.<\/p>\n<p>So\u2026 I did a situationally imposed fast until dinnertime when my hunger got the best of me.\u00a0 As a side note, fasts are something that you have to be mentally prepared for.<\/p>\n<p>I wasn\u2019t prepared for this one.<\/p>\n<p>Moving on.<\/p>\n<p>The recipe below is the product of the kale that I brought with me and things that I had on my pantry shelves.<\/p>\n<p>As I continue to preach to all of my clients, a recipe is a template.\u00a0 Kale could be spinach, black beans could be kidney beans and for a vegetarian meal tuna could just be eliminated from this recipe<\/p>\n<p>That being said, this is a great tasting combo that I thoroughly enjoy!<\/p>\n<p><span style=\"color: #386c9a;\"><strong><u>Black Bean, Kale &amp; Quinoa Salad<\/u><\/strong><\/span><\/p>\n<p><em><strong><span style=\"color: #9dbfad;\">Serves 4<\/span><\/strong><\/em><\/p>\n<p><span style=\"color: #9dbfad;\"><strong><u>Dressing<\/u><\/strong><\/span><\/p>\n<p><a href=\"http:\/\/www.cathybiase.com\/?attachment_id=4136\" rel=\"attachment wp-att-4136\"><img decoding=\"async\" class=\"wp-image-4136 alignleft\" src=\"http:\/\/cathybiase.com\/wp-content\/uploads\/2019\/12\/olive-oil-3326706_640.jpg\" alt=\"\" width=\"148\" height=\"202\" \/><\/a><\/p>\n<p>\u00bc cup Extra Virgin Olive Oil<\/p>\n<p>Juice of \u00bd a lemon<\/p>\n<p>1 tsp. honey<\/p>\n<p>1 tsp. Italian Seasoning<\/p>\n<p>\u00bd tsp. salt<\/p>\n<p>\u00bc tsp. pepper<\/p>\n<p>Combine all ingredients together and mix well.<\/p>\n<p><span style=\"color: #9dbfad;\"><strong><u>Salad<\/u><\/strong><\/span><\/p>\n<p>2 cups of kale, washed and chopped (hard spine removed)<\/p>\n<p>1 can (398g) black beans, rinsed<\/p>\n<p>1 can tuna (210g)**<\/p>\n<p>1 cup cooked quinoa<\/p>\n<p>\u00bd cup chopped red onion<\/p>\n<p><span style=\"color: #9dbfad;\"><strong><u>Directions<\/u><\/strong><\/span><\/p>\n<ol>\n<li>Make dressing<\/li>\n<li>Put kale in bowl and add dressing. Massage the kale to break down its fiber. Let rest 5 minutes<\/li>\n<li>Add remaining ingredients and toss to coat with dressing<\/li>\n<li>Let the salad sit for 5-10 minutes and serve<\/li>\n<\/ol>\n<p>**omit tuna for a vegetarian meal<\/p>\n<p>Enjoy!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Having good quality ingredients stocked in your kitchen pantry means always having a meal on hand.
