Lentils are an edible pulse, part of the legume family and they are little powerhouses on the nutrition front. They contain high levels of fibre which can help to improve digestive health, reduce cholesterol and balance blood sugar. They are a very good source of protein, potassium, folate, iron and manganese.

Sprouting lentils area an easy way to increase the nutrient value that they have. Sprouting reduces phytic acid, increases enzymes and makes them easier to digest.

I have soaked my lentils for 2 days and today I make soup!

It takes a bit of planning ahead but it is a very worthwhile thing to do!
