Silvio Lettrari owner of Kaslo Sourdough

Silvio was born and raised in Bavaria, Germany, and immigrated to Canada with his family in his early teens. Upon settling in the small town of Kaslo, BC with his wife, Gabi, he found that he missed the hearty sourdough breads he was used to from Germany. So he started baking his own sourdough breads out of a small stone brick oven, during the summer of 1991. As demand for his naturally fermented breads increased over his first two summers; he and Gabi expanded to make a year-round bakery. This is how Kaslo Sourdough Bakery began.

Due to over two decades of positive feedback and steadfast support from customers, as well as extensive research into the positive benefits of naturally fermented foods, Kaslo Sourdough recently expanded into a novel product: sourdough pasta. Today, his three children, Stefan, Heike and Heidi are also a part of the family business. They have expanded their business and sell their sourdough pastas at health food stores and grocery stores across Western Canada.
